Representing one of Oregon’s most kick ass cities is Peter and this man can smoke some salmon. I won’t beat around the bush – I traded a pair of sold out Michael Franti @ Britt tickets for a package of his goods and his contact name in my phone is “Pete Smoked Salmon”. What will Southern Oregon’s leading culinary experts think? Does Peter smoke the best salmon in Southern Oregon? We’ll find out tomorrow in historic Jacksonville, Oregon. Todd knows the key to excellent smoked salmon is fresh fish and he just happens to be one of the best fishing guides in Southern Oregon. There’s a reason people call this man “Hooker”. Representing “The Point” is local favorite John. Why is John a local favorite? Because he’s kind enough to give his goods to our favorite bartender in Jacksonville – who will then pinch us off a piece or two if he’s in the mood to share. John smokes some great salmon – but is it the best in Southern Oregon? We’ll find out on October 4th. Smoke with the skin on – that’s what everyone say’s. Greg from Medford see’s things differently – smoking on a grill, removing the skin. This smoked salmon looks amazing! The key to exceptional smoked salmon is fresh salmon and Ellis knows he has lots of that in Tillamook! Looks like Ellis smokes in the Pacific Northwest fashion and doesn’t wash off the dry brine before smoking. My mouth is watering as I type this.
